Easy Cucumber Pickles and this and that

Hi everyone! Sorry I haven't been blogging and commenting so much lately. I even missed Writing Wednesday. Summer has kept me too busy. I am picking blackberries every other day - yesterday I was in the patch from 7:30 in the morning until noon. We had a yard sale and I still have not figured out why sitting around all day having a yard sale wears you out as much as it does. I have been trying to keep up with our garden, which really is not very hard to do, even the cucumbers are drying up. And speaking of cucumbers. . . below is an easy recipe I found in our family cookbook. I do not like dill pickles and this recipe is not too sweet and it is not too sour.

EASY CUCUMBERS PICKLES

7 cups sliced cucumbers (do not peel) 
1/2 cup chopped peppers
1 cup sliced onions
1 cup vinegar
2 cups sugar
1 t celery seed
3T salt

Put in large pan. Cover with water. Add 3 T of salt. Let stand for 1 hour.


 
Mix 2 cups sugar, 1 cup vinegar and 1t celery seed. Drain water from cucumbers and put in 2 quart jars and pour mixture over them, let stand for 3 days before eating. Will keep for weeks.

Okay, that is how the recipe read. I changed it a little. 
I used 8 cups of sliced cucumbers and I did not put in the peppers or onions. I heated up the sugar and vinegar mixture until it dissolved. I had to make more of the sugar and vinegar mixture to fill up the 2 quart jars (that may be because I did not add the peppers and onions). I doubled the mixture and it made too much, so I think 3 cups of sugar and 1 1/2 cups of vinegar would make enough.

I really liked the flavor. My husband said it tasted like old timey pickles.

 

It has been raining this morning. I sure hope it keeps up. We are so dry here!



I saw this and just had to take a picture. Do any of you farmers know what this is? It looked like it had the initials HH on it.

Some of the females in our extended family always seem amazed when they discover that I can not only cook, but that I'm very good at it, as well. If they only knew that a lot of my talent comes from watching food programs on TV and reaping wonderful recipes from the ladies online :-)

  9. Hi Janet! Thanks for the pickle recipe, it sounds wonderful I know what you mean, it has been a busy time for me too. I have seen several bloggers who I read regularly going through the same thing. It has been a busy summer and it is difficult sometimes to stick a regular writing schedule. I sure enjoyed your last post about the blackberry picking, that was a lot of fun. Your blog is one of my most favorites. Continue to enjoy your busy summer, but don't let yourself get too hot out there. It was 105 here today!

    Sounds as though you are having a busy summer. Our blackberries are gone, and the garden has almost dried up, too. Your recipe for the pickles sounds really good.
    We used to make a lot of bread of butter pickles, too. I sure like pickles. Your recipe really sounds good. We had a good rain last night and were so glad. It's been really dry here, too.

  12. I've never made pickles. My sister's mother-in-law used to make salt pickles. I don't know how, but they were really tasty and crunchy.

    We need rain, too. Nothing but sun and 100+ degree days in our forecast.

  13. Janet, it looks like it might be an old combine. I don't know what "HH" would stand for. Could it have been "IH" with the "I" placed inside the "H"? That would make it International Harvester. I just stumbled onto your blog and I'm going to show it to my wife. She's from WV and into quilting, gardens, etc. Jim

  14. My classes and the outside work have kept me extemely busy this summer. I haven't been able to read and comment as much as I like to either.
    Copied your recipe and gonna try it as soon as my cucumber harvest gives me enough cucumbers. The vines are stingy this year. LOL
