Squash, Cucumbers and Recipes

How is your garden doing?
We have lots of cucumbers and squash coming on.


But, what do you do with so many cucumbers?
I don't make pickles, but we  slice them and put them in a bowl of cold water and vinegar and set them on the table at supper time.
We make cucumber sandwiches with them. When my tomatoes finally get ripe, we will have tomato, cucumber and mayo sandwiches....yum!

Here are a couple of cucumber recipes:

CUCUMBER SALAD

4 cucumbers peeled and sliced then 2 bunches of green onions (chopped)
Mix together
1 cup mayonnaise
1/4 cup sugar
4 tsp. vinegar
1/2 tsp. dill weed
1/2 tsp. salt
Pour over cucumbers and onions

This is very good and I could just eat and eat it.
But, I have to admit that I leave out the green onions and I use Miracle Whip.

Here is another one. I have never tried this one before, but it is one of my cousin's recipes and is in our family cookbook.


INDIAN CUCUMBER SALAD

INGREDIENTS:
3 medium cucumbers
1 cup plain low-fat yogurt
1 T fresh lemon juice
1 t ground cumin
1 t dried mint leaves
DIRECTIONS
Peel cucumber.  Cut in half lengthwise and discard seeds.  Slice thinly.
Mix the remaining ingredients together; add cucumbers and toss well.
Serve chilled.

And, what do you do with all your squash or zucchini?


We have made squash casserole, fried squash and squash cakes.

You can go here for my recipe for squash bread. It is delicious! You can use either yellow squash or zucchini.

Enjoy your veggies while you have them. Take those zucchini, leave them on your neighbors porch, ring their doorbell and run! And maybe leave my recipe for squash bread, they'll appreciate it.

  1. I know what you mean, we are swamped with cucumbers and squash. Thank you for the recipes, I copied them. I like to make zuchinni bread and I make Bread and Butter pickles. They are rather expensive to make but if you have your spices already, you're ok. My family likes them. You can also substute squash for the cucumbers if you like.

  2. Our lettuce is just about done, it really doesn't like this heat, and I'll miss those fresh plucked leaves. Our tomatoes, we have 12 plants, are filled with green tomatoes. One plant is an early variety we tried this year, and I'm hoping those ones ripen soon!

    Thin sliced zucchini is also great on the grill with a little olive oil and sea salt on it :)

  4. I'm afraid I can't say that I've had cucumbers or squash; well, we had one squash and two or three cucumbers which were rather bitter. This is all because of the dry, hot weather we're having. The tomato plants seem to be holding their own, but no tomatoes to eat yet. We did get a fairly good crop of potatoes and onions. But I'm happy for you folks who are harvesting veggies.

  5. Loved the recipes! My Grandma Rock used to slice them along with tomatoes and douse with vinegar and sugar..yum! Hadn't thought about that in years..thanks!

  6. Hi Janet, love the recipes! Especially the Indian Salad. I have got to try that one. I bet the mint tastes very refreshing. Have you ever tried rice vinegar with your cucumbers?   7. Janet -- cukes are one of my favorite of three veggies from the garden. I am lucky this year as my son has taken charge of the garden as I injured my knees. Like your recipe of using cumin and yogurt with the cukes. -- barbara

  9. Nice squash ideas … I was considering a casserole today, they freeze well … but so does the bread! Oh my, decisions, decisions … beautiful, bountiful decisions!
