Good for you - Low Fat Bean Soup

Ok, everybody seems to be on a diet or just trying to eat better and get more fit.

So I am posting a very simple soup that is good for you.

Sorry, I have no pictures, but this soup is so simple you don't need any pictures.

I don't know about you, but I like simple foods. I was raised in the country and learned to cook that way. Back in the old days it was pinto beans, potatoes, cornbread, biscuits, etc. and on Sunday we had fried chicken!

Items needed:

A pot big enough to put everything in
large spoon
can opener :)

2 cans of chicken broth
1 can corn
1 can pinto beans
1 can navy beans

optional: chopped peppers, chopped onions, chopped ham

Open and put all the above ingredients in the pot. Simmer for as long or little as you want.

You can just let it simmer while your pan of cornbread is baking in the oven.

Beans and corn are already low in fat, but you can also buy the beans fat free. And the beans and corn provide you with lots of fiber that they say we Americans don't get enough of in our diet.

This soup would be good on these cold winter days.

  1. That is easy, Jan. If you use vegetable broth and fat free beans, you have a fat free vegetarian soup high in protein and fiber. I really need to get back to my vegetarian diet.

  4. I grew up on pinto beans. I have to be in the mood to eat them now.
    But The Captain can't stand the smell of them cooking. So I never make them.

  5. That soup sounds good. I like everything in it. I finally did good today on my diet and didn't eat anything I shouldn't have, but the bad thing is I am still sick and I have hardlyh moved at all today so I know I'm not burning too much calories. Hopefully tomorrow this cold will break and I will have some energy back.
